It wouldn’t be springtime without some new releases from local brewery Cosmo. Owner and brewer Ian has been hard at work to bring us not one, not two, but FOUR brand new bottle Saison releases. (PLUS a canned release of his ever tasty and refreshing ‘Valley Gold’ Golden Ale.)
Plum Saison
“Our house Saison aged 6 months in a single whisky barrel from Bathurst Grange Distillery. Refermented on ripe santa rosa plums from Emu Swamp near Orange, NSW. Pours like a rich, bubbly pinot. Heaps on the nose, full plum flavour in the mouth and great with a steak in any month. We are very happy with this beer!”
Rhubarb Saison
“This is a blend of our house Saison, sour blonde beer and 2 year barrel aged Saison. Aged between 3 and 9 months on rhubarb from John at Nashdale Fruit Co, near Orange, and Aaron at Harvest Farms, Bilpin, NSW. Delicate, earthy and delicious with a light pink hue.”
Feijoa Saison
“Feijoa from countless front yards in Bathurst make their way to us every winter. The fruit is fermented in our house Saison before pressing and barrel aging 8 months. Blended with younger beer, ageing on carbonic macerated fruit, before bottling. Very refreshing, drinkability is high, fruit is subtle but clear within a balanced acid profile.”
'Sour House' Kettle Soured Wheat Ale
“Kettle Soured Wheat Beer brewed with 100% organic NSW grains. Soured with Greek yoghurt overnight before boil and mixed culture fermentation. Dry hopping with Nelson Sauvin bringing flavours of lemon curd, green pear, gooseberry and nectarine”
