The See Saw Incubator range has expanded this month with the addition of the 2024 Gamay. Gamay grapes picked from their 900m Balmoral vineyard on a cool 29th February morning have been carbonic macerated in sealed vessels for 12 days (50% of the crop) before being de-stemmed and pressed. The remaining crop was de-stemmed and cold soaked before being left to warm up and start a spontaneous fermentation, then being hand plunging once per day for 12 days.
Following the maceration and fermentation, the gamay was pressed to stainless steel and older oak. No fining or filtration before the drop was bottled in August 2024.
2024 Gamay presents itself draped in a bright garnet red, and the colour delivers expectedly with a palate of “bright crunchy wild strawberries and red plums”. A lively savoury edge introduces a tannin structure that is velvety, and background oak balances.
We love a versatile wine around here, and my advice is that it may just be worth grabbing a couple bottles to have on hand, as this Gamay is suitable to drink year round! Chill a few degrees prior to a weekend BBQ and stash a bottle (or few) for room-temp enjoyment with a wood-fired pizza once those crisp Autumn nights hit.
