Billy Button Riesling
A close to perfect growing season with even temperatures resulted in fruit with pristine varietal flavours, great natural acidity, and optimum maturity at harvest.
The fruit was handpicked and chilled before being crushed, destemmed, and pressed. Once cold settled the juice was racked clean and inoculated with selected yeast to capture varietal character. After a cool and slow ferment, the wine was sulphured and left on lees in stainless steel for 2 months prior to clarification and bottling in June 2021.
Translucent pale straw in the glass with aromas of bright and pure citrus. Trademark crisp lime juice on the palate, with delicate yet formidable acid. Great to drink now, also perfect for the cellar.
