Cofield Sauvignon Blanc
Sourced from a mature, single vineyard in the King Valley. Picked mid season to capture both natural acidity and fruit character. A long, cool ferment to preserve aromatics, prior to six month maturation in stainless steel tank.
Tropcial fruit aromas of melon and passionfruit, with a subtle grassy note in the background. Intensely flavoured with primary tropical fruit characters, a flicker of tart granny smith apple, and a back bone of clean, crisp acidity.
