Eminence 'Baritone' Rosé
A dark, dry rose that borders on light red; showcasing the bright exuberance of early picked pinot noir.
Crafted from 100% pinot noir, the grapes were hand-picked at an early stage in their ripeness, giving a classic Whitlands acid structure. They were destemmed, crushed and left overnight to soak up the colour, before pressing the next morning. The juice was sent straight to barrel to ferment on full solids, no yeast or sulphur was added. After a long, slow ferment and partial malo, the wine was sulphured and left on lees in barrel for 10 months. No filtration, fining, adjustments or additives other than sulphur. 110 dozen produced.
This rose is halfway between a light red and rose; dark in colour but with the soul of a lighter wine (and bone dry). It features superfine acidity, creamy texture from lees ageing and a kaleidoscope of red fruit flavours that are reminiscent of wild raspberries, cherries, red currants and pomegranate. A super-premium, super-charming wine.
