This chardonnay is a blend of only two barrels. The first one was a complete experiment: chardonnay picked at 12 baume, destemmed and fermented on skins for 11 days before pressing. It sat in it's lone barrel for 14 months on lees, distinctly weird in the beginning, and then rounding out with some time.
The second barrel was the very best hogshead of chardonnay from our sparkling base program, picked at 11 baume and barrel fermented. It was originally destined to be a single barrel blanc-de-blanc but the logistics proved too much. Neither of the barrels went through malo.
The final blend is surprising in it's harmony; the skin contact gives texture - but not colour or extract, just an essence of chardonnay. The sparkling base gives minerality, acid and length and the two together seem to fit together effortlessly. On the leaner end of things, its refreshing, composed and nuanced.
