Eminence Pinot Gris
Textured, restrained, slightly off-dry style of pinot gris blended from our two best barrels of 2021.
100% pinot gris, hand picked and whole bunch pressed. Both parcels were sent straight to barrel (one oak, one stainless steel) to ferment on full solids, no sulphur or yeast was added. One barrel completed ferment and the other stopped towards the end of the fermentation. Rather than restart, we sulphured the RS barrel and let the wine sit on lees for a further 9 months prior to racking, settling and bottling. No filtration, fining, adjustments or additives other than sulphur. 60 dozen produced.
Light gold in colour with candied lemon and floral aromatics, the palate is clean and lifted, with lemon-tart-esque flavours. The texture is creamy from the lees ageing while showing quite prominent acid. Despite being 8 grams per litre, the residual sugar weaves in seamlessly; when chilled it's almost imperceivable and is slightly more obvious as it warms up. Overall it's a surprisingly complex wine.
