Gundog Estate Hilltops Shiraz

The 2019 Estate Shiraz is a blend of high-quality parcels of fruit from the Four Winds and Wallaroo vineyards. Having gradually steered away from the inclusion of Viognier, the 2019 Estate Shiraz is 100% Shiraz. For each parcel of fruit, a combination of crushed fruit and whole-berries were cold-soaked for 2 days, prior to warm fermentations, which we allowed to initiate naturally, before over-seeding with M2 yeast. Maturation then took place over 12 months in French oak puncheons. This release summarises the qualities of the vintage nicely, and I feel serves as a great illustration of regional style; vibrant, intensely aromatic, medium in weight across the palate, with that regional combination of dark fruit and higher spice notes enclosed in that glove of velvety tannin.
