Fruit from vineyards in the Coal River, Derwent and the d’Entrecasteaux Channel. Predominantly whole berry, 5% whole bunch, natural yeast, held on skins for 21 days while getting gently pumped over once a day while the ferment was most active (4-5 times in total). Pressed directly to and matured in oak (15% new). Bottled unfined and unfiltered. Alc - 13.0%, pH - 3.63, TA 5.3g/L. 2448 bottles produced without fining or filtration
94 Points "A side of beef bought directly from the farmer and a bottle of this will take dinner to a whole new level. Blackcurrants, black cherries, black pepper and black Angus on the nose are reminiscent of a riper Cornas or St Joseph from Northern Rhone. On the palate, the sheer silky black goodness continues and is joined by vanilla, bay leaves, pickling spices, liquorice, toast and candied mixed nuts. Despite the ripeness, this has enough acidity and balanced tannins to be something that you could tuck away in the back of the cupboard for a few years.
