100% Viognier.
One-part whole bunch ferment and left whole for one moonth. One-part whole bunches cold soaked, basket pressed and then fermented in neutral American oak. One-part through carbonic maceration, then whole bunch pressed to old American oak.
All ferments conducted on the wild side.
Blended and bottled with a sprinkling of sulphite and some evasive malic acid.
