All handpicked 20% whole bunch 5 day carbonic fermentation, the remainder of the grapes destemmed and fermented in an open top fermenter. Gently basket pressed all together to a 3 year old large format Austrian oak barrel and neutral French barriques for maturation. Cold settled in stainless steel prior to bottling in September capturing natural brightness, high acidity, blackberry, cola nut, violets.
