Shadowfax Mondeuse Noir

Grown extensively in the Savoie region, in the shadows of Mt Blanc in France. Shadowfax has one of the largest plantings of the grape in Australia. Its natural large bunch sizes and high cropping levels are extensively thinned out to produce more concentration. The warm and dry growing season of 2019 was perfect for ripening this fickle variety.

Carefully hand harvested fruit was picked in the cool of the morning to retain vibrancy. Whole bunches underwent wild fermentation in small open fermenters. The wine was then pressed and left to rest in older French barrels in the underground wine cellar for 10 months prior to racking and bottling.
