Only made in years when the fruit is at it's absolute best and using only estate grown 100% cider variety apples. The Cat's Pyjamas reflects the very best of what we do. We have created complexity through a wild fermentation on solids followed by 18 months maturing in oak barrels. This is a Methode Traditionnelle sparkling cider, hand riddled and hand disgorged, it is a labour of love.
